1 lb chicken or pork
1 carrot
1 pepper
3-4 green onions
frozen peas
2 pkgs. Oriental flavor Ramen noodles
2 c. water
Teriyaki sauce
2 cloves garlic
Sesame oil
Slice meat and coat with sesame oil and seasoning packets (from Ramen). Brown the meat. Add carrots, peppers, onions, and a handful of frozen peas. Crush or press the garlic and add to the pan. Cook until tender crisp. Add water to pan and stir to loosen bits from the bottom of the tpan. Add ramen and cover. Bring to a boil and cook until noodles are soft. Add teriyaki to taste and toss to coat.
** If you don't have prepared Teriyaki sauce you can make your own Asian sauce by combining crushed ginger, garlic, soy sauce, sesame oil, rice wine vinegar, and crushed pineapple.

Corn Chowder
I'm not usually a fan of corn chowder, but my friend made this for me when we went to visit and it is good!!
5 slices bacon (or more...)
1 medium onion, thinly sliced
2 c cooked or canned whole kernel corn
1 c diced potatoes
1 can condensed cream of mushroom soup
2 1/2 c milk
1 tsp salt
dash pepper
boil potatoes in a small saucepan until they can be pierced by a fork
fry bacon until crispy, chop into small pieces
combine all ingredients in a soup pot, cook over medium heat until hot, stirring occasionally

Easy Mini Pizza
Pita Bread
Pizza Sauce*
Pizza toppings of your choice: Pepperoni, green peppers, etc
Mozzarella cheese
Preheat oven to 400. Place pita bread on baking sheet. Spread pizza sauce on pita bread. Top with pizza toppings and cheese. Cook 10 minutes or until cheese is melted
*If you don't have pizza sauce, just add some oregano, garlic powder and paprika (or whatever spices you have on hand) to a can of tomato sauce

Scotcharoo Bars
(Sorry, I realize this isn't a meal, but it is easy if you need to bring dessert somewhere fairly quickly!)
1 cup sugar
1 cup Karo syrup
1 cup peanut butter
5 to 6 cups Rice Krispies (or some generic version of the same)
Half of a 12 oz bag of butterscotch chips
Half of a 12 oz bag of chocolate chips
Mix sugar, syrup, and PB in a large mixing bowl and heat in microwave (30 seconds to a minute at a time), stirring well, until mixture is creamy and melted. Add Rice Krispies and mix until RK are well coated. Press mixture into 9x13" pan.
For frosting, put butterscotch and chocolate chips into microwavable bowl and heat until melted (I mix it about every minute). Spread over bars and let cool and harden before cutting.

1 can (10 oz) diced tomatoes and green chilies
1 can (15 oz) corn, drained
8 oz sour cream
1-2 cups shredded cheddar cheese
1 can (15 oz) black beans, drained
1 jar (8 oz) chunky salsa
2 cups cooked brown rice
crushed red pepper to taste
ground black pepper to taste
sliced black olives, optional
chopped onion, optional
Tortillas
Preheat oven to 350. Set aside half of cheese. Mix first nine ingredients together, pour into a casserole dish. Top with olives, onions, extra cheese. Bake for 50-60 minutes. Serve on tortillas with sour cream, salsa, avocado or guacamole.
Hints
If you want to add meat, brown 1lb ground turkey or beef and add 1-2 cups of the meat to the mixture.
This dish can also be served with chips as a very hearty dip
