1 lb. Ground beef or turkey
Onion
6 oz. Cream cheese
16 oz. Salsa
10 tortillas
1 c mozzerella
1 c cheddar
Brown meat with chopped onion. Add cream cheese and half of salsa. Stir together. Spoon meat mixture into tortillas, roll up and place ends down in a greased 9x13 pan. Sprinkle cheddar and mozzarella over the top. Pour rest of salsa over the top. Bake at 375° for 30 minutes. Let stand for 10 minutes. You can garnish with shredded lettuce and chopped tomatoes.

Cafeteria Classic

The inspiration for this very gourmet meal came from my Catholic grade school cafeteria. In fact, a lot of my dinners are inspired by my grade school days! After eating repeat meals for 9 years, they begin to stick with you! I'm sure this will be the first of many 'throw back' meals that I'll post for you all! This is also a quick and easy meal that takes less than 10 minutes from cupboard to plate.
- Brown 1 lb of ground beef (you can add some onion if you like, but I usually don't to save time) and make two packets of brown gravy, following the packet directions(I buy the Clear Value brand for 33 cents a packet. It literally says "brown gravy" on the front and looks like a packet of taco seasoning.).
-Mix up 6-8 servings of instant boxed mashed potatoes according to the package directions
- Combine the beef and gravy and serve over mashed potatoes.
Serve with a salad or your favorite veggie for a rounded out meal!
